Try physically breaking into wherever their computer is located, placing a hidden camera on the ceiling above their keyboard, and write a program using a machine learning library to use the visual data from the camera to identify key presses. That was a bit of a joke, I honestly don't have a very good answer, but if you do end up doing that please tell me how it goes. Also, I've seen some USB keyloggers out there on hak5, so if you are capable of breaking and entering, you could try one of those. As for doing things through the internet, I'm a bit of a noob and can't give you any advice.
